Interesting question. All current breeds of chickens are from the red junglefowl, wild chicken which lives in the forest of Southeast Asia. Here’s a picture of it:
To create a new strain, you probably should have to have two different strains and use artificial insemination as the male and female of different strains might not mate. Artificial insemination means that you obtain sperm form the males and inseminate the female. Thereafter, collect the eggs and incubator them in an incubator. These processes are difficult to master though, but patience and practice will pay off!
